It is no secret that I'm a big paper plane girl, and this olive oil marinated strawberry paper plane is exact proof of how good this simple cocktail can be. The cocktail itself already has many notes of strawberry, but when you add some muddled strawberry to the mix, it becomes one of my favorite drinks of summer.
In a bowl, muddle 2 strawberries and 2 teaspoons of olive oil together. Let this sit for 5 minutes to let the strawberries release their natural juices.
To a cocktail shaker, add 1 ounce of Aperol, 1 ounce of Amaro, 1 ounce of bourbon and 1 ounce of lemon juice. Add ice and shake for 30 seconds, or until the shaker is cold to touch.
To a lowball glass, add the muddled strawberries and a large ice cube. Pour the drink over the top and drizzle with any remaining strawberry & olive oil left in the bowl.
