These "donut holes" are vegan, gluten free, protein-packed and filled with delicious, vanilla flavor. They are my favorite thing to grab when I need something sweet, and the coffee glaze keeps them fun and interesting. They take minutes to make and they keep for forever, so I always have them on hand as a snacking staple!
In a medium bowl, mix together 150 grams of almond flour, 43 grams of protein powder, 1/4 cup of date syrup, 2 tablespoons of melted coconut oil, 1 teaspoon of vanilla and 1/2 teaspoon of kosher salt. Mix until you get a tacky dough, see blog post for more details and tips!
In small bowl, whisk together 1 tablespoon of coffee and 50 grams of powdered sugar until you get a drippy glaze.
Divide and roll the dough into 10 equal sized balls, about 1" in diameter each. Dip the tops of each ball into the coffee glaze and place the undipped part down on a plate, letting the glaze drip down and cover the sides.
Store in the fridge for at least 5 minutes to let the glaze harden, and then enjoy!
