Cacao & Walnut Fudge Balls

These Cacao & Walnut Fudge Balls are something I make at least once a week. They taste like the brownie bits you find in ice cream, they are so decadent yet filling, and when you put them in the freezer? Amazing. Chocolate lovers can unite on this one, it's fudgey, chocolatey, delicious and just. that. good.

Equipment

Ingredients

  • 2 cups (250g) pitted dates
  • 1 cup walnuts
  • 1/2 cup rolled oats
  • 1/4 cup flax meal, or chia seeds
  • 3 tablespoons cacao powder, or chocolate protein powder
  • 2 tablespoons maple syrup
  • 2 tablespoons plant-based milk
  • 1 square of dark chocolate, for shaving over the top

Instructions 

  1. Tear 2 cups of dates in half and add them to the food processor along with t1 cup walnuts, 1/2 cup oats, 1/4 cup flax meal, 3 tablespoons of cacao powder and 2 tablespoons maple syrup. Drizzle 1 tablespoon of plant-based milk on top.
  2. Process the mixture for a few minutes, pulsing every now and then, until all the ingredients form a cookie-dough-like texture. If your mixture ever needs a bit of help, add the additional 1 tablespoon of plant-based milk.
  3. Transfer the mixture to a bowl and chill in the fridge for 5-10 minutes.
  4. Use a damp hand to roll the dough into 12 equal-sized balls. Shave some dark chocolate on top and enjoy!
  5. You can either store these in the fridge for up to 2 weeks or in the freezer for up to 5-6 months.
