jump to reviews

Easter brunch has a very specific energy: a little bit springy, a little bit celebratory, and very centered around the table. It’s the kind of meal where jammy eggs, something baked, and something sweet can all exist on the same plate (preferably with a giant pot of coffee nearby). Whether you’re hosting or just contributing a dish to the table, or just looking to celebrate spring (no Easter required!) here are 14 of my favorite Easter brunch recipes that feel festive, fresh, and easy to pull together.

Greeny Tahini Egg Salad

If you think you don’t like egg salad, I’m willing to bet you’ve just never had the right one. I used to be firmly anti–egg salad myself (a bold stance, I know), but this greeny tahini version completely changed my mind. It’s bright with herbs, creamy from tahini, and feels exactly like the kind of fresh, scoopable thing that belongs on an Easter brunch table.

Greeny Tahini Egg Salad

I really think that the only reason people don't like egg salad is because they've never had a GOOD egg salad. And this version is a GREAT egg salad. The eggs are halved, giving you big chunks of egg instead of the mash that egg salads can usually turn into. The egg salad is brightened up with herbs, tahini and lemon, which is a deceptively delicious egg salad combination. It's not your traditional egg salad, but it might be the best.

Dill and Feta Egg Salad

I love a mayo-free egg salad, and I think there should be much more room (and acceptance!) for the vinegar-based egg salads out there. And I’d like to option up this Dill and Feta Egg Salad as my first example – it has salty feta, fresh dill, and a punchy vinegar dressing that makes it feel especially perfect for spring brunch.

Dill and Feta Egg Salad

We always talk about how potato salads can either be mayonnaise based or vinegar-based, and I think it's about time we apply that same flavor logic to egg salads. This egg salad has zero mayo in sight, but you won't miss it in the slightest. Sharp and salty feta, bright dill and buttery Castelvetrano olives make the "dressing" of this salad, and it's a high protein lunch staple I want to keep on repeat.

Carrot Butter Biscuits

These carrot butter biscuits are one of my favorites to sneak into the bread basket. They’re flaky, buttery, and just a little soft thanks to the carrots, which add both moisture and a subtle sweetness. Even the biscuit skeptics in your life will happily grab one.

Carrot Butter Biscuits

These biscuits are for the biscuit-skeptics in your life. They are equal parts flakey and sweet, slightly soft from the carrot and packed with buttery flavor. This recipe only makes six biscuits, and is easy enough to whip up on a lazy weekend morning.

Sourdough English Muffins

Okay, so you’ve made your low-discard sourdough starter, here is one of the easiest and most rewarding ways to use it. These Sourdough English Muffins are naturally leavened, wonderfully craggy, and made for splitting open and piling high with butter, jam, or whatever else ends up on your Easter brunch plate.

Sourdough English Muffins

This is one of my easiest recipes for using your sourdough starter, and it's a great way to get into naturally leavened baking! These naturally rising english muffins are a mix-and-go kind of dough. You just let them rest overnight, do a bit of shaping and portioning in the morning, and then they are on your griddle (or pan) and ready to be breakfast. They are by far one of my most favorite comforting homemade breakfasts, and a great easy way to use your sourdough starter!

Strawberry and Raspberry Scones

These roasted strawberry and raspberry scones are jammy, tender, and beautifully flaky, with a pop of pink citrus sugar that makes them feel instantly festive.

Strawberry and Raspberry Scones

These roasted strawberry and raspberry scones are jammy, tender, and flaky, with a pop of pink citrus sugar that makes them perfect for Valentine’s Day, Easter, Mother's Day or any excuse you have to bake something pink!

Salted Date & Brown Butter Carrot Bread

One of my most visited recipes is my brown butter banana bread, but I figured, now it’s carrot’s turn! It’s rich with brown butter, studded with jammy dates, and just sweet enough to flex between breakfast and dessert. Think of it as carrot cake’s laid-back brunch cousin.

Salted Date & Brown Butter Carrot Bread

One of my most famous recipes is my brown butter banana bread, but now it’s time for carrot bread to get the same treatment. This carrot loaf with salty cardamom dates and not-too-sweet cream cheese icing is a secret-weapon dessert. Meaning: it’s super easy and remarkably impressive. Plus, you can skip the icing and call it breakfast, or use it for an extra decadent dessert.

Brown Butter Banana Bread

I couldn’t mention it above and not include it! This is just a really great, really easy brown butter banana bread. For someone who is into baking, I’ve always believed that the simplest baking recipes tend to be the best, you don’t need to fuss too much with them, you don’t need to pull out all the appliances in your house, and you can use the shitty butter and it still will taste great.

Brown Butter Banana Bread

This banana bread is the most moist, tender and delicious banana bread out there. It uses brown butter and chunks of banana to make the magic happen, and it comes together with just a bowl and a whisk!

Blueberry Muffins

If I had to nominate a classic brunch muffin, it would be this one. These blueberry muffins are fluffy, buttery, and absolutely packed with berries, with a lemon-ginger sugar on top that adds just enough sparkle to make them feel extra special.

Blueberry Muffins

I can confidently say these are the best blueberry muffins I've ever had. They are insanely easy, and the lemon ginger sugar takes them to the next level. They are moist on the inside, fluffy throughout, crispy on top, and packed with fresh blueberries. They are my favorite type of muffin, and now probably my favorite summer recipe.

Layered Peach Coffee Muffins

These muffins use a little layering trick with peach slices that feels slightly chaotic but works like magic. The peaches bake right into the batter, creating little pockets of juicy sweetness while keeping the muffin light and tender. They’re part breakfast, part dessert, and fully brunch-worthy.

Layered Peach Coffee Muffins

These Layered Peach Coffee Muffins are moist, packed with layers of fresh peaches and include a hit of coffee flavor that pairs perfectly with the sticky-sweet juicy summer fruit. These muffins are one of my absolute favorite breakfasts and desserts, and are a simple way to make a showstopping treat.

Vegan Carrot Muffins for Two

If you love an accidentally vegan, small-batch baking recipe, look no further than these Carrot Muffins for Two! They are sweet but not-too-sweet, stacked with a ginger sugar topping, and are perfect for either a sweet nightcap or a delicious mini breakfast. Don’t worry, you can easily scale it up to serve more!

Carrot Muffins for Two

If you are ever looking for plant-based single-serve carrot muffin recipe, I suggest you try this one out so you can have your single serving…but then a leftover muffin for later. Because one carrot muffin is simply not enough. This recipe can flex between breakfast and dessert, and is lightly sweet while still being moist and delicious. The ginger sugar on top is a must!

Banana Bread Cinnamon Rolls

These Banana Bread Cinnamon Rolls are what happens when banana bread and a soft, pillowy cinnamon roll decide to combine. The dough is extra tender thanks to a banana tangzhong, and the banana caramel on top is exactly the kind of slightly over-the-top brunch situation I will always support.

Banana Bread Cinnamon Rolls

These cinnamon rolls use the tangzhong method to mimic super-soft and ultra moist banana bread. The best part is the banana caramel topping, which is so unique but incredibly easy to make (and even easier to eat!).

Carrot Cake Crepes

Crepes are already a brunch classic, but carrot cake crepes take things one step further. Stack them up with a little filling and suddenly you have a crepe cake that feels both impressive and totally appropriate for a celebratory spring morning.

Carrot Cake Crepe Cake

These carrot cake crepes are easy to turn into a crepe cake – a not-too-sweet, perfectly stunning breakfast that is wonderful for any spring brunch or fun morning get together. Plus, the whole recipe comes together in a blender. If you aren't in the mood for cake for breakfast, you can also serve the carrot cake crepes as a traditional folded-crepe. Just top with your favorite fruits and a dash of cinnamon, and you have a fresh, sweet, show-stopping breakfast ready to go.

Pistachio Honey Carrot Cake

I love a snacking cake, and this pistachio honey carrot cake fits the category perfectly. It’s simple, nutty, lightly sweet, and the kind of cake you can bring whenever the table needs “just one more thing.”

Pistachio Honey Carrot Cake

This is the best kind of snacking cake. It's made with minimal ingredients, it's subtly sweet and you can snack on it throughout the week. This cake will make you feel good and is so satiating with every slice.

Apricot & Strawberry Polenta Shortcake

Shortcakes are one of my favorite desserts, and this version adds a little twist with tender polenta biscuits. Piled high with apricots and strawberries, it’s bright, juicy, and exactly the kind of dessert that makes an Easter table feel complete.

Apricot & Strawberry Polenta Shortcakes

The best part about these shortcakes is that there's no shaping, folding or kneading needed. You just stir everything in a bowl, scoop the shortcakes right onto the fruit and bake. The polenta shortcakes come out all fluffy and delicious, while the fruit is bright but sweet. It's one of the best summer desserts.
